Kerala-style vegetable stew is a comforting dish, not to mention healthy and loaded with essential nutrients. From carrots to peas, you can add all kinds of seasonal vegetables, and make this stew your go-to pick on a busy weekday.
5 French beans 2 cloves, green chillies 2 cardamom pods 3 tbsp peas ½ tbsp coconut oil ½ carrot, potato ½ onion, cauliflower 7-8 curry leaves 2¼ cup coconut milk 1 cup water Salt to taste 1-inch ginger, cinnamon
Wash all the fresh vegetables and dice them.
Heat oil in a kadhai and saute cardamom, cloves, and cinnamon.
Add vegetables to the kadhai and saute them.
Sprinkle salt, spices, and curry leaves on top. Pour water into the kadhai.
Once the vegetables are half cooked, pour coconut milk and let the ingredients boil.
Finish with more coconut milk to adjust the consistency and enjoy.
