Inji puli is one of the first few dishes served on a banana leaf when you sit to savour Sadhya. It adds warmth and tangy notes, balancing savoury, bitter, and sweet dishes. Here is how you can make it Kerala-style without leaving your home.
7-8 curry leaves 4 tbsp oil ¾ cup ginger 1 tsp chilli powder 1 tsp mustard seeds 5 red, green chillies ¼ tsp hing, turmeric ½ tsp fenugreek seeds ¼ cup tamarind Salt to taste
Soak tamarind in warm water for 30 minutes and strain the blend.
Chop the ginger and chillies, and keep them aside.
Heat oil in a pan and saute mustard seeds and fenugreek seeds. Add chillies.
Fold in the ginger and cook until it turns golden brown.
Add powdered spices and roast them until the oil floats on the surface.
Pour tamarind water and let the blend reduce. Add jaggery and salt at the end. Serve it.
