Kerala-style egg curry is a creamy preparation that you can make in under 30 minutes. It is delicious and made with staples found in every South Indian household. Check out this recipe to add a twist to your original one.
2 tbsp coconut oil 1 cinnamon stick 2 cardamoms, red chillies 3 cloves, green chillies 1/2 tsp fennel seeds 1 sprig of curry leaves 1/2 inch ginger 4 cloves garlic 1/2 cup onions
2 tomatoes 1 teaspoon salt 1/4 tsp turmeric, garam masala 1/2 tsp chilli powder, pepper 1/2 tsp Kashmiri chilli powder 1 tbsp coriander powder 1 cup water 1/2 teaspoon sugar 4 hard-boiled eggs 250 ml canned coconut milk 1/2 sliced tomato
Heat oil in a kadhai and saute cinnamon, cardamom, cloves, fennel seeds, curry leaves, ginger, and red chillies.
After a minute, add garlic, green chillies, and onion. Add salt and tomatoes.
Once tomatoes are mushy, add powdered spices and cook until they release the oil.
Add water and sugar to adjust the consistency and balance the flavour. Add gashed hard-boiled eggs and coconut milk.
Cook the ingredients until done. Temper the curry with mustard seeds, curry leaves, sliced shallots, pepper, and sliced tomatoes.
