Kerala-style egg curry, also known as "mutta curry," is a flavourful South Indian dish made with boiled eggs simmered in a rich, spiced coconut milk gravy. Infused with curry leaves, mustard seeds, and aromatic spices, this curry strikes the perfect balance of heat and creaminess.
4 - 6 boiled eggs 2 sliced onions 1 chopped tomato 1 tbsp finely chopped ginger-garlic 2 slit green chillies 1 sprig of curry leaves 1 cup thick coconut milk ½ cup water ¼ tsp turmeric powder 1 tsp red chilli powder 1½ tsp coriander powder ½ tsp garam masala ¼ tsp black pepper powder ½ tsp mustard seeds 2 tbsp coconut oil Salt to taste
Boil and prep eggs, peel and lightly slit them.
Heat oil, splutter mustard seeds, then sauté onions, green chillies, and curry leaves till golden
Add ginger-garlic and tomato, cook until they turn soft and mushy.
Mix in spices, add eggs, and coat them well in the masala.
Pour coconut milk, simmer gently for 5 minutes, then finish by adding garam masala.
