This Kerala-style Drumstick curry is a tangy, flavourful, and aromatic dish made with drumsticks, cooked in a coconut-based gravy, and spiced with some traditional Kerala spices.
3-4 drumsticks 1 cup grated coconut ½ tsp turmeric powder 1 tsp red chilli powder ½ tsp coriander powder ½ tsp mustard seeds 2-3 dried red chillies 1 sprig curry leaves 1 finely chopped small onion 2 chopped tomatoes 1 tsp ginger-garlic paste ½ tsp cumin powder 1 tbsp coconut oil 1 cup water Salt to taste ½ tsp garam masala
Heat oil, add mustard seeds, dried red chillies, and curry leaves. Sauté onions, ginger, garlic paste and tomatoes.
Stir turmeric, chilli powder, coriander, cumin, and salt.
Add chopped drumsticks and mix well.
Mix the ground coconut paste and water. Simmer it for 20 minutes until drumsticks turn tender.
Garnish with curry leaves and serve with rice or roti.
