Kerala-style brinjal curry is a spicy and creamy creation that goes well with Malabar parotta and even steamed rice. It is subtly sweet and a perfect pick to feed baingan to your family. Here is how you can make it at home.
For Brinjals ½ tsp turmeric powder 8 baby brinjals Salt to taste 2 tbsp coconut oil
For Curry 7-8 curry leaves ½ tsp fennel, mustard seeds 1 tbsp coconut oil 2 green chillies 1 tsp red chilli powder 2 tomatoes ½ cup coconut milk 2 tbsp coriander leaves ¼ tsp turmeric powder 1 cup pearl onion
Wash and cut brinjals into wedges and saute them for a few minutes on a high flame with salt and turmeric powder. Keep them aside.
In the same pan, heat more oil and mustard seeds, curry leaves, and fennel seeds. Saute green chillies and onions.
Once onions are cooked, add tomatoes and powdered spices. When tomatoes are mushy, add coconut milk.
When the curry comes to a boil, add brinjal wedges. Cook it for a few more minutes, and turn off the heat.
Garnish Kerala-style brinjal curry with coriander leaves and serve it with paratha or rice.
