Avial is a mixed vegetable dish popular in South India. It is healthy, loaded with veggies, and a perfect example of balanced flavours. Follow this guide to make it in Kerala style and enjoy it with flaky and crispy Malabar parotta.
2 slit green chillies 5 cups mixed veggies Salt to taste ¼ cup curd 7-8 curry leaves 4 tbsp coconut oil ½ tsp turmeric powder 1 cup water 1 tsp cumin seeds ½ cup coconut
Chop all the vegetables in large chunks and toss them in a wide pan with oil and slit green chillies.
Sprinkle turmeric and salt and pour water on the ingredients. Cover the pan with a lid.
After 5-8 minutes of cooking, add coconut, chilli powder, and cumin powder.
Once the vegetables are cooked, add the whisked curd.
Prepare a tempering of coconut oil and curry leaves.
Garnish the avail with tempering and serve with flaky parotta.
