Kerala-style avial is a delicious and nutritious recipe that pairs well with parotta. It is also a part of Sadya during Onam and Pongal festivities. If you like slightly sweet, spicy, and tangy preparation, here is your guide to making it at home.
1 cup drumsticks, pumpkin 1 cup ash gourd, yam 1 cup plantain 1 cup Mangalorean cucumber ½ cup French beans Salt to taste ½ tsp turmeric, mustard seeds 2-3 chillies 1 tsp cumin 1 cup grated coconut 1.5 cups water 1 cup curd 8-10 curry leaves 2 tbsp oil
Wash vegetables and chop them. Keep them aside.
Take a grinder and blend coconut, chillies, and cumin with half a cup of water.
Heat oil in a pot and let mustard seeds and curry leaves crackle.
Add turmeric and vegetables. Let the veggies cook for 15 minutes.
Add coconut paste and let the ingredients simmer.
Add curd and cook for another 5 minutes. Serve avial hot.
