Thandai tres leches is an exquisite Indo-Western dessert created especially for Karwa Chauth 2026. A light sponge cake is soaked in a luxurious three-milk mixture infused with traditional thandai spice blend, crushed nuts, rose water, and saffron. Topped with a cloud of whipped cream and garnished with dried petals, this aromatic cake melts in the mouth and provides a truly memorable sweet finish to festive dinner tables.
For Sponge Cake: 1.5 cups all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 cup melted butter, 3/4 cup sugar, 1 cup milk, 1 teaspoon vanilla extract For Thandai Milk Syrup: 1 cup evaporated milk, 1 cup condensed milk, 1 cup heavy cream, 2 tablespoons thandai powder (containing fennel, almonds, melon seeds, poppy seeds, and cardamom), a pinch of saffron, 1 teaspoon rose water For Topping: 1 cup whipped cream, chopped almonds, and rose petals
Whisk the dry sponge ingredients in one bowl and the wet ingredients in another, then combine gently into a smooth batter and bake in a greased pan at 180C for thirty minutes until golden and springy.
Prepare the thandai milk syrup by whisking together the evaporated milk, condensed milk, heavy cream, thandai powder, saffron strands, and rose water in a jug until well blended.
Poke numerous holes all over the warm baked sponge cake using a skewer or fork.
Pour the spiced thandai milk mixture slowly over the cake, allowing the sponge to absorb every drop as it cools down completely.
Frost the chilled cake with a smooth layer of whipped cream, garnish with chopped almonds and fragrant rose petals, and refrigerate before slicing.
