Karnataka-Style Akki Rotti Recipe For Breakfasts With A Crunch

Akki Rotti is a crispy pancake-like dish, which literally means ‘rice bread’ in Kannada. The rotti can be served with a dash of butter or ghee.

Ingredients

2 grated cucumbers 1.5 cups rice flour 2 tsp finely chopped green chillies 1 tbsp finely chopped curry leaves 2 tbsp finely chopped coriander leaves ½ tsp cumin seeds Salt, as needed Water, as needed Oil for cooking

Step 1

In a bowl, add the grated cucumber, rice flour, green chillies, curry leaves, coriander leaves, cumin seeds, and salt as per taste.

Step 2

Mix. Add water little by little and knead into a dough. Make a slightly loose dough and add water a little at a time.

Step 3

Take a portion from the dough and form it into a ball.  Apply oil to a baking sheet and spread it evenly circularly.

Step 4

Make sure it is spread out as thin as possible. Then flip it on the hot pan and remove the paper.

Step 5

Apply some oil on both sides and cook well. Serve with chutney or spicy vegetable curry.

Step 6

Another traditional and popular way to make akki rotti is to stretch the dough over the plantain leaf, prop it on the griddle with the leaf on top and cook till it is crisp.
