3-4 bitter gourds Salt to taste 4 cups of water ¼ tsp turmeric, garam masala ½ tsp cumin, chilli powder 1 tsp fennel, coriander powder 1 tbsp gram flour 2 tbsp oil 1 tsp mango powder A pinch of asafoetida 2 green chillies 2 onions, garlic cloves
Cut bitter gourds into thin slices and soak them in a solution of water and salt.

After an hour, drain the excess water and wash again with fresh water.
Heat oil in a pan and saute cumin seeds, hing, and green chillies.
Sauté garlic and onions. Once onions are transparent, add bitter gourd slices.
Add all the powdered spices and cook them until the moisture evaporates.
Drizzle lemon juice on the top and garnish with coriander leaves.
