For busy mornings, kanda poha is an impeccable breakfast option that can be whipped up in less than 15 minutes. All it needs is flattened rice, sauteed onions, roasted peanuts, chopped veggies, and spices.
1.5 cups flattened rice 1 tablespoon oil 2 tablespoons roasted peanuts ½ teaspoon mustard seeds 10 curry leaves ¼ cup chopped onion ¼ cup peas ¼ cup chopped tomato ½ teaspoon turmeric powder ¼ teaspoon red chilli powder Salt to taste Lemon juice for garnishing
Rinse the flattened rice till they soften a bit, and set them aside.
Heat some oil and saute mustard seeds, curry leaves, and chopped onion.
Mix in peas, chopped tomatoes, turmeric powder, salt, and red chilli powder.
When the tomatoes are soft, add the rinsed flattened rice and mix well.
Cook for about five minutes and garnish with roasted peanuts and lemon juice. Serve it hot.
