Lotus stem, also known as Kamal Kakdi, is a crunchy vegetable with a mild taste. It is healthy, rich in fibre and iron, and commonly used in curries, stir-fries, pickles, and snacks.
Thinly slice lotus stem, deep-fry until it gets golden, then toss with chaat masala, black salt, and red chilli powder for a crunchy snack.
A North Indian-style curry where lotus stem is cooked in an onion-tomato gravy with ginger, garlic, and warm spices, best served with rotis.
Lotus stem slices are fried until crisp, then tossed in a sweet and spicy sauce made with honey, soy sauce, garlic, and chilli peppers.
Sliced lotus stem marinated with mustard oil, fennel, fenugreek, chilli powder, and turmeric to create a tangy, crunchy pickle.
Grated lotus stem mixed with spices and gram flour, shaped into balls, fried, and simmered in a creamy tomato and cashew curry.
