This kaju katli recipe captures the silky, diamond-cut luxury loved across India. Its delicate texture, rich cashew flavour, and quick melt-in-the-mouth bite make it a timeless sweet that turns even ordinary moments into festive celebrations.
1 cup cashews ½ cup sugar ¼ cup water 1 tsp ghee 1 pinch cardamom powder (optional)
Grind cashews to a fine, dry powder, ensuring you pulse lightly so they don’t release oil and turn pasty
Make a sugar syrup by heating sugar and water until it forms a glossy, slightly sticky consistency.
Add the cashew powder to the syrup and mix continuously on low heat until a soft dough begins to come together.
Grease a surface with ghee, transfer the dough, and knead gently while warm to achieve a smooth, crack-free texture.
Roll the dough evenly, allow it to cool, then cut it into classic diamond shapes for perfect Kaju Katli.
