Kada Prasad is a sacred dessert that is deeply connected to Baisakhi. Prepared with simple ingredients, it has a rich, nutty taste with a smooth texture, making it comforting in every bite, and it is easy to make at home.
1 cup whole wheat flour (atta) 1 cup ghee 1 cup sugar 3 cups water
In a heavy-bottomed pan, heat ghee on a low flame. Once warm, add the whole wheat flour and roast it, stirring it constantly so that it does not burn.
Roast the atta on low heat until it turns golden brown, but not burnt, and it begins to release a nutty aroma.
In a separate pan, heat some water, add sugar and let it dissolve fully. Boil it gently so that the sugar melts thoroughly without leaving any grainy texture.
Slowly pour the hot sugar water over the roasted atta mixture and stir constantly to mix everything smoothly, making sure there are no lumps.
Cook this on a low flame and keep stirring continuously, until the mixture thickens and begins to leave the sides of the pan. The texture should come out as smooth, glossy, and a bit flowing.
Once done, turn off the flame and keep it for a short while. Serve warm Kada Prasad tastes garnished with chopped nuts.
