For an instant and crispy dosa, you cannot use lentils and rice. You need grains that can be turned into a batter quickly and spread on a hot griddle. Jowar is healthy and a fun twist to the South Indian staple. Here is how to use it.
1 cup jowar flour 1 green chilli 2 tbsp onions 2 tbsp coriander leaves 1 tsp ginger ½ tsp cumin, sea salt 2 tbsp ghee 2.5 cups water 1 tsp ginger 5-6 curry leaves
In a bowl, combine jowar flour, chillies, onions, and other ingredients.
Add water to the bowl to prepare a thick batter. Keep it aside for 15 minutes.
Grease a pan with oil and spread a thin layer of the batter on it.
Let the base of the dosa cook and turn brown.
Drizzle ghee across the edges so that you can easily lift it.
Serve the dosa hot with the chutney of your choice.
