Millets have made a strong comeback in Indian kitchens for all the right reasons. Rich in fibre, gluten-free, and easy to digest, they work well in quick, filling snacks too. Here are five simple millet snack ideas that don’t need much prep.
Swap puffed rice with puffed jowar or ragi and mix with chopped onions, tomatoes, green chilli, lemon juice, and a bit of masala. A crunchy, dry bhel with more fibre and no frying.
Make mini idlis using ragi or jowar flour mixed with curd and semolina. Steam in a mini idli mould. Toss them in a tadka with mustard seeds, curry leaves, and gunpowder for a quick evening snack.
Cook foxtail millet and mix with mashed potato, grated carrot, chopped coriander, and basic spices. Shape into small tikkis and pan-fry. Great for lunchboxes or tea-time.
Dry roast thin poha along with roasted jowar flakes or ragi flakes, peanuts, curry leaves, and raisins. Add salt and a pinch of haldi. Store in an airtight jar for a ready-to-eat snack.
Make thin dosas using fermented bajra or ragi batter. Once cooked, roll them with a light potato masala or leftover sabzi. Slice into pinwheels or serve as wraps.
