Jodhpuri Mirchi Bada: Easy Recipe For This Street-Style Snack

Mirchi Bada is a popular Indian snack, especially in Rajasthan, especially in the city of Jodhpur. It consists of large green chillies stuffed with a spicy potato filling, dipped in gram flour batter, and deep-fried until crispy. Served with chutney, it's a flavourful, crunchy treat enjoyed with tea.

Ingredients

6-8 large green chillies 2 potatoes 1 tbsp oil 1 tsp cumin seeds 1 tsp mustard seeds 1 tsp turmeric powder 1 1/2 tsp red chilli powder

1 tsp garam masala 1 tsp chaat masala 2 tbsp chopped fresh coriander leaves 1 cup gram flour (besan) 1/4 cup rice flour (for extra crispiness) 1/2 tsp baking powder 1/2 tsp ajwain (carom seeds) Salt 

Step 1

Slit the green chillies lengthwise, removing the seeds. Heat oil in a pan and add cumin seeds and mustard seeds. Let them splutter.

Step 2

Add turmeric powder, red chilli powder, garam masala, and chaat masala. Add the mashed potatoes, chopped coriander leaves and salt.

Step 3

Cook for another minute. Remove from heat and let it cool. Carefully stuff each chilli with the potato mixture. 

Step 4

In a bowl, mix gram flour, rice flour, baking powder, red chilli powder, turmeric powder, ajwain, and salt.

Step 5

Gradually add water and mix to form a smooth, thick batter. Heat oil in a deep frying pan and fry the badas.
