Sun-dried tomato pasta is a Mediterranean-inspired dish bursting with tangy sun-dried tomatoes, garlic, olive oil, and herbs. Tossed with pasta and parmesan, it’s a rich, vibrant, and comforting meal perfect for special occasions.
200 g pasta ½ cup sun-dried tomatoes (packed in oil, drained) 3 peeled garlic cloves 2 tbsp olive oil ½ tsp red chilli flakes ¼ cup sliced black olives ¼ cup freshly grated parmesan cheese 6–8 chopped fresh basil leaves ½ tsp salt
Cook pasta until al dente.
Blend sun-dried tomatoes with garlic and olive oil into a paste.
Heat a pan, add chilli flakes, and toss in the paste.
Add pasta, olives, and salt.
Garnish with basil and parmesan.
