Jasprit Bumrah’s Go-To Comfort Food: Make This Fragrant Chicken Biryani At Home

Indian fast bowler Jasprit Bumrah has often mentioned chicken biryani as one of his favourite comfort foods. Biryani is a classic Indian rice dish made by layering aromatic basmati rice with spiced chicken and herbs. The dish develops deep flavour through marination, slow cooking, and fragrant whole spices. When cooked using the dum method, the rice absorbs the rich chicken masala and becomes incredibly aromatic.

Ingredients

500 g chicken pieces 2 cups basmati rice soaked 2 onions sliced 2 tomatoes chopped ½ cup yogurt 1 tbsp ginger garlic paste 2 tbsp biryani masala ½ tsp turmeric Whole spices like bay leaf, cardamom and cloves Fresh mint and coriander 3 tbsp oil or ghee Salt to taste

Step 1

Marinate chicken with yogurt, ginger garlic paste, turmeric, salt and biryani masala for at least thirty minutes.

Step 2

Fry sliced onions in oil with whole spices until golden and cook chopped tomatoes into a thick masala base.

Step 3

Add marinated chicken and cook until it becomes about seventy percent done and aromatic.

Step 4

Parboil basmati rice separately until partially cooked and drain the water.

Step 5

Layer rice over the chicken with mint and coriander, cover tightly and cook on low heat until the biryani finishes steaming.
