Japanese curry is a mildly spiced, slightly sweet curry made with a thick roux base, vegetables, and your choice of protein, served with steamed rice. It’s a comforting one-pot meal.
1 tbsp oil or butter 1 onion (sliced) 1 carrot (cut into chunks) 1 potato (cut into chunks) ½ cup cauliflower or beans (optional) 100 g chicken, tofu, or paneer (cubed) 2 tbsp Japanese curry roux or block 2 cups water Salt to taste Cooked rice for serving
Heat oil or butter in a pan and sauté onion until lightly golden.
Add carrot, potato, and any other vegetables, followed by the protein of choice.
Pour water into the pan and bring to a boil, then reduce heat and simmer until vegetables are tender.
Add Japanese curry roux and stir until dissolved, letting the curry thicken.
Serve hot with steamed rice.
