Chicken katsu curry is a Japanese classic, which is made with crispy breaded chicken cutlets with a rich, flavourful curry poured over steamed rice. Try this dish at home with this easy recipe.
4 boneless chicken breasts 1 cup all-purpose flour 2 beaten eggs 1 cup panko breadcrumbs Salt and pepper to taste Oil for frying For the Curry Sauce: 1 tbsp oil 1 finely chopped onion 2 sliced carrots 2 minced garlic cloves 1 tbsp curry powder 1 tbsp garam masala 1 tbsp all-purpose flour 2 cups chicken stock 1 tbsp soy sauce 1 tsp honey (optional) For Serving: Steamed rice Chopped parsley or spring onions for garnish
Flatten chicken breasts, season with salt and pepper, coat with flour, egg, and breadcrumbs.
Shallow fry until golden, crispy and set aside.
Sauté onions, carrots, and garlic, add curry powder, garam masala, and flour, then pour in chicken stock, soy sauce, and honey
Simmer the gravy until thickened.
Slice fried chicken, place over steamed rice, and pour the curry sauce on top.
Garnish with parsley or spring onions and enjoy!
