One of the go-to orders at an Indian restaurant, jalfrezi is an all-time favourite for all the right reasons. Made by strir-frying a mix of vegetables and a blend of spices, here’s how you can make it at home.
2 tablespoons oil ½ teaspoon cumin seeds 1 green chilli 1 onion 1 inch ginger 1 clove garlic 1 cup tomatoes 1 tablespoon tomato puree 1 teaspoon red chilli powder 1 teaspoon coriander powder ½ teaspoon turmeric powder ½ teaspoon cumin powder 1 cup mixed vegetables (capsicum, carrots, beans, peas) ½ teaspoon garam masala Salt to taste Coriander leaves for garnish
Heat some oil and add cumin seeds and green chilli. Let the cumin seeds splutter.
Add chopped onion, ginger, and garlic and cook until golden brown.
Add chopped tomatoes and tomato puree and cook for 2-3 minutes.
Mix in red chilli powder, coriander powder, turmeric powder, and cumin powder.
Add all the chopped veggies and cook till tender. Season with salt and garam masala.
Garnish with chopped coriander leaves and serve.
