Jackfruit curry, or kathal ki sabzi, is a rustic North Indian dish where tender jackfruit is simmered in a spiced onion-tomato gravy. It’s hearty, wholesome, and has the texture of slow-cooked meat, a staple in many traditional Indian homes.
2 cups raw jackfruit (cut into cubes) 1 onion (finely chopped) 1 tomato (chopped) 1 tbsp ginger-garlic paste 1 tsp coriander powder ½ tsp turmeric ½ tsp garam masala Salt and oil to taste
Boil jackfruit pieces until slightly tender, then drain.
Heat oil in a pan, add onions and ginger-garlic paste, and sauté until golden.
Add tomato, coriander, turmeric, and salt, and cook until the masala thickens.
Add jackfruit, toss well, and simmer on low heat for 10 minutes before serving hot with roti or rice.
