Cucumber Curry is a light, mildly spiced recipe with roots in South Asian cuisine, particularly Indian and Pakistani kitchens. Its simplicity and health benefits make it a staple in many households, offering a perfect balance of flavours and textures.
2 peeled and chopped cucumbers 1 finely chopped onion 1 chopped tomato 1/2 cup yoghurt 1 tsp ginger-garlic paste 1/2 tsp cumin seeds 1/2 tsp turmeric powder 1 tsp red chilli powder 1/2 tsp garam masala Salt to taste 2 tbsp oil Fresh coriander (for garnish)
Heat oil in a pan, add cumin seeds and sauté until they splutter.
Add chopped onions and sauté until they turn golden.
Stir in the ginger garlic paste, chopped tomato, turmeric, red chilli powder, salt, and cook it until the tomatoes soften.
Mix in the yoghurt and simmer for 5 minutes until the curry thickens.
Sprinkle garam masala and stir the curry well.
Garnish with fresh coriander and serve!
