Palak soup is the kind of dish your mom probably relied on to sneak greens onto your plate without a fight, and tbh, it's easy to see why it worked. Also, it can be made with simple ingredients you likely already have; this creamy soup is quick to prepare, healthy, and satiating.
– 1 tablespoon butter – 1 onion, chopped – ½ teaspoon jeera powder – 4 cups spinach – 1 small potato – 2 garlic cloves – 3 cups vegetable stock or water – A pinch of nutmeg – Salt and pepper – ¼ cup cream or milk
Heat the butter in a large pot over medium heat and then sauté the onion and garlic until soft and fragrant for about 5 minutes.
Add the cubed potato and cook for 2 minutes, stirring now and then.
Pour in the vegetable stock and bring to a boil, then reduce the heat and let it simmer until the potato is tender for about 10 minutes.
Mix in the chopped spinach and cook for another 2–3 minutes, just until wilted.
Remove from heat and blend the soup until smooth.
Return the soup to the pot and stir in the nutmeg, pepper, jeera powder, and salt.
Stir in the cream or milk, if you like, and gently heat on low.
Ladle into bowls and serve hot.
