Spinach, aka palak, is an excellent way to add iron to your diet. Pureed spinach cooked in an onion-tomato base with cubed paneer makes palak paneer sabzi, which can be served with roti or rice.
1 bunch fresh spinach 1 onion, chopped 2 cloves of garlic 1-inch piece of ginger 1 tomato, chopped 1 green chilli 1/4 teaspoon haldi 1/2 teaspoon red chilli powder 1/2 teaspoon coriander powder 1/4 teaspoon cumin powder 1/4 teaspoon garam masala 1 tablespoon ghee Salt to taste 200g paneer Fresh cream for garnishing
Heat some ghee and add chopped onion. Sauté till translucent.
Add minced ginger and garlic. Stir in chopped tomatoes and green chilli.
Mix in all the spices and sauté till the tomatoes are soft.
Add the spinach and cook till the spinach wilts. Let the mixture cool and blend till smooth.
Heat some oil and add shallow-fried paneer cubes. Transfer to the spinach puree.
Let the sabzi cook and season with salt. Garnish with fresh cream and serve hot.
