Want to add a boost of iron to your child's meals without them making any fuss about it? This creamy palak khichdi can be the perfect option, as it is wholesome, easy on the stomach and can be prepared quickly in one pot.
½ cup rice ¼ cup moong dal 1 cup spinach (palak), chopped 1 tsp ghee ½ tsp cumin seeds 1 small garlic clove (optional) A pinch of turmeric Salt to taste 2½ cups water
Wash the rice and moong dal thoroughly in running water and soak them for about 15 to 20 minutes.
In a pressure cooker, heat ghee and add cumin, minced garlic and turmeric. Sauté it for a short time until fragrant.
Now add the soaked rice, dal, and chopped spinach to this, and stir for a minute until everything is evenly mixed.
Pour in water, season it with salt and pressure cook for three whistles. Once cooked, let the pressure release on its own.
Drizzle a spoonful of ghee and serve hot palak khichdi, paired with a bowl of curd for a wholesome meal.
