Sometimes healthy eating on weekends feels like a reward. During the summer, you usually try to add some protein and iron to your meals. This aloo palak recipe might be the best way to do that.
2 tbsp oil 1 medium-sized cubed potato 5 garlic cloves, chopped 2 green chillies ¼ tsp cumin seeds 1 sliced onion 1 chopped tomato ½ tsp turmeric powder 1 tsp coriander Powder ½ tsp chilli flakes 1 bowl chopped spinach Salt, as per taste
Heat oil in a pan and add cube-sized cut potatoes for frying Saute the potatoes and cover the lid and let it cook for 3 minutes
After that, take it out the potatoes from the pan and keep it aside in a plate Add cumin seeds to the same pan and let it temper.
Now add garlic and cook. Add onion and the green chillies, cook for about a minute or two, till it gets translucent.
Add tomatoes and cook till turned mushy. Add turmeric powder, coriander powder, chilli flakes and salt and mix it.
Add the fried potatoes and cook for a minute. Finally, add the chopped spinach and stir it together
Cover the pan and let it cook for around five minutes. Remove the lid and serve with roti or rice.
