Celebrate International Sushi Day 2026 with this brilliant, zero-fuss "lazy" sushi plate that delivers all the clean, savoury flavours of a classic maki roll without any of the meticulous rolling or bamboo mats. By building a flat base of seasoned, sticky sushi rice and topping it with creamy avocado, crisp cucumbers, and tender protein, you create a texturally rich, modern meal in minutes. Finished with a drizzle of spicy mayo and a scatter of crispy crushed nori sheets, it provides an elegant, deconstructed twist on a beloved global staple.
1 cup sushi rice (short-grain white rice), cooked and cooled slightly  1 tbsp seasoned rice vinegar  1/2 ripe avocado, sliced  1/2 cup crisp English cucumber, finely sliced  100g cooked crab sticks, shredded salmon, or firm tofu cubes  1 sheet of roasted nori seaweed, torn into small strips  1 tbsp mayonnaise mixed with 1 tsp sriracha, and toasted sesame seeds for garnish
Drizzle the seasoned rice vinegar evenly over the warm cooked sushi rice, tossing gently with a flat wooden spoon to coat the grains before letting it cool to room temperature.
Press the seasoned rice down firmly into a flat, even square layer directly onto a clean serving board or platter to mimic the open foundation of an unrolled roll.
Arrange the sliced avocado, crisp cucumber, and your chosen protein in beautiful, overlapping rows straight across the top of the flattened rice bed.
Scatter the crushed nori seaweed strips generously over the entire surface, then finish by zigzagging the spicy sriracha mayonnaise across the top and dusting with toasted sesame seeds.
