Surti sev khamani is a popular Gujarati farsan known for its soft, crumbly texture and light sweetness. This instant version replaces soaked chana dal with semolina for quicker preparation while retaining the traditional tempering and garnish. The dish is mildly tangy, slightly sweet and perfect with tea. Fresh nylon sev and coconut add the signature finish.

Ingredients

1 cup fine semolina ½ cup yogurt ½ cup water 1 tsp sugar ½ tsp turmeric Salt to taste 1 tsp fruit salt For Tempering 1 tbsp oil 1 tsp mustard seeds 1 tsp sesame seeds 8–10 curry leaves 2 green chillies chopped For Garnish Nylon sev Fresh coriander Grated coconut

Step 1

Mix semolina, yogurt, water, sugar, turmeric and salt to form a thick batter and rest for ten minutes.

Step 2

Stir in fruit salt and steam the batter in a greased tray until cooked through.

Step 3

Cool slightly and crumble gently using fingers to create grainy texture.

Step 4

Pour prepared tempering over the khamani and garnish generously before serving.
