To make your regular rice-based idlis healthier and gluten-free, you can make suji vegetable idlis. Without spending time on fermentation, these instant idlis are the perfect option for a South Indian meal.
1 cup suji 1 cup curd 1 cup mixed veggies (carrot, onion, beans, peas, etc.) 1/2 cup water 1 teaspoon salt 1/2 teaspoon cumin seeds 1/4 teaspoon mustard seeds 1 green chilli 1 teaspoon oil 1/2 teaspoon baking soda
Heat a pan and roast suji for 2-3 minutes.
Mix the roasted suji with curd, water, and all the spices till you get a smooth batter.
Just before steaming, mix in baking soda.
Grease the idli moulds, pour the batter, and steam to perfection.
In about 10 minutes, your instant vegetable idlis will be ready to serve.
