While the traditional South Indian staples require overnight fermentation, you can make suji upma instantaneously. Add your favourite veggies a blend of spices, and make yourself a healthy breakfast.
1 cup suji 3 cups water 1/2 tablespoon ghee 1/2 teaspoon mustard seeds 1 teaspoon urad dal 1 teaspoon chana dal 10-12 cashew nuts 1 onion 1 green chilli 1 teaspoon grated ginger 8-10 curry leaves Salt to taste Coriander leaves for garnishing
Dry roast the suji for about three to four minutes and set it aside.
Heat ghee and add mustard seeds. Add urad dal and chana dal and fry till golden brown.
Add chopped cashew nuts, curry leaves, green chilli, and grated ginger and saute.
Mix in chopped onions and cook till soft. Add water and salt, and let it boil.
Turn the heat to low and keep stirring till the suji absorbs most of the water.
Once the upma is of the desired consistency, garnish with coriander and serve.
