If you have been skipping your favourite dosas just because you didn’t have the time to ferment the batter, here’s a trick. Replace the rice and dal-based batter with suji and curd and whip up instant dosa.
1 cup suji 1 cup curd 1/2 cup water 1 teaspoon salt 1/2 teaspoon cumin seeds 1/4 teaspoon mustard seeds 1 green chilli 1 teaspoon oil 1/2 teaspoon baking soda
Heat a pan and roast suji for 2-3 minutes.
Mix the roasted suji with curd, water, and all the spices till you get a smooth batter.
Just before steaming, mix in baking soda.
Heat a dosa tawa, grease it, and pour the batter onto the tawa. Spread it into a circle.
Drizzle some oil and cook the dosa till crispy. Serve hot with sambar.
