Rava idlis are a quick and light breakfast option that can be prepared instantly without involving any fermentation process. Prepared by mixing rava or sooji, it’s perfect for rushed mornings when you want to have something that feels healthy, is filling, and also easy to make.

Ingredients

1 cup rava (sooji) 1 cup curd (yoghurt) ½ cup water 1 tbsp oil or ghee 1 tsp mustard seeds 8–10 leaves of curry leaves 1 tbsp chopped carrots 1 tbsp chopped coriander ½ tsp salt ½ tsp eno or fruit salt

Step 1

In a bowl, mix rava with some curd, water, and a pinch of salt. Stir this well to make a thick, lump-free batter. Keep it for at least 20 minutes.

Step 2

To make it more flavourful, in a small pan, heat a little oil and add mustard seeds and a few curry leaves. Let it splutter, then pour this tempering on the batter.

Step 3

Add some chopped carrots and coriander to the batter, and mix so that everything gets combined while the texture remains light and airy.

Step 4

Just before you steam the idlis, add Eno to the batter and mix, then pour this into the greased idli moulds.

Step 5

Steam the idlis for about 10 to 12 minutes until they are cooked through. Check by inserting a toothpick; if it comes out clean, it is cooked.

Step 6

After 10 to 12 minutes, remove from flame, cool it slightly, and serve it warm with coconut chutney or sambar.
