Skip the soaking and fermentation time to make idlis. If you want to have an instant South Indian meal, go for rava idlis. Just follow these 5 steps and make fluffy idlis with sooji for a quick breakfast.
1 cup semolina 1 cup curd 1/2 cup water 1 teaspoon salt 1/2 teaspoon cumin seeds 1/4 teaspoon mustard seeds 1 green chilli, chopped 1 teaspoon oil 1/2 teaspoon baking soda
Heat a pan and roast semolina for 2-3 minutes.
Mix the roasted rava with curd, water, and all the spices till you get a smooth batter.
Just before steaming, mix in baking soda.
Grease the idli moulds, pour the batter, and steam to perfection.
In about 10 minutes, your instant rava idlis will be ready to serve.
