Gajar gobi shalgam achaar is a quintessential North Indian staple, especially during the winter season. To make the vegetable pickle instantly and pair it with your meals, follow this step-by-step recipe.
1 cup carrots 1 cup cauliflower 1 cup turnip 2 tbsp mustard oil 1½ tbsp rai 1 tsp red chilli powder ½ tsp turmeric powder Salt to taste 2 tbsp lemon juice or white vinegar
Chop the carrots, cauliflower, and turnip and blanch them in salted boiling water.
Wait for about 2-3 minutes, and then drain them. Set them aside and let them cool down.
Take a bowl and mix rai, red chilli powder, turmeric, salt, mustard oil, and lemon juice.
Toss in the chopped vegetables and coat them with the prepared masala. Let it rest for 30 minutes.
Transfer to an airtight container, refrigerate, and you can enjoy the pickle for about a week.
