If a milkshake and a sundae had a royal child, it would be the Mango Mastani. Named after the legendary Princess Mastani, this thick, luscious drink is a staple of Pune’s dessert culture. Unlike a regular shake, the Mastani is not meant to be sipped through a straw; it’s a decadent experience eaten with a spoon, featuring a base so thick it can hold a massive scoop of ice cream and a mountain of toppings without sinking.
2 cups thick mango pulp (chilled) 1 cup full-fat milk (chilled) 2 tbsp sugar (optional) 2 large scoops of vanilla or mango ice cream Toppings: Fresh mango chunks, glazed cherries, slivered almonds, and tutti frutti
Blend the mango pulp, milk, and sugar until you have a shake that is significantly thicker than a standard milkshake.
Pour the shake into a tall glass until it’s about three-quarters full.
Place a large, firm scoop of ice cream right on top of the shake.
Decorate with a handful of fresh mango chunks, nuts, and cherries. The goal is to make it look as regal as possible.
Serve immediately with a long spoon to navigate the layers of cream and fruit.
