The street style chicken frankie combines spiced meat and melted cheese wrapped in a warm flatbread. This recipe uses pre cooked or leftover chicken to assemble a hearty wrap quickly. A generous layer of processed cheese melts perfectly against the hot chicken filling. Pickled onions add a sharp crunch that cuts through the rich cheese and savoury flavours.
2 whole wheat rotis or flatbreads 1 cup cooked chicken, shredded 2 tablespoons oil 1/2 cup sliced onions 1 tablespoon frankie masala or garam masala 1/4 cup processed cheese, grated 2 tablespoons green chilli sauce 1 tablespoon vinegar
Soak half of the sliced onions in vinegar for ten minutes to create a quick pickle.
Heat one tablespoon of oil in a pan, toss the shredded chicken with the frankie masala, and cook for two minutes until heated through.
Warm the rotis on a flat griddle using the remaining oil until slightly crisp on the edges.
Spread the green chilli sauce over the warm rotis, layer the spiced chicken, add the pickled onions, top generously with grated cheese, and roll tightly.
