Indori Poha is a light-flavoured dish from Indore. It is prepared with soft flattened rice and tempered with spices. The dish boasts a hint of sweetness and a tangy twist. This iconic street food is a perfect blend of taste and texture, making it an all-time favourite.
2 cups poha 1 finely chopped onion 1 finely chopped green chilli 1/4 tsp mustard seeds 1/4 tsp turmeric powder 2 tbsp peanuts 1 tsp sugar Salt to taste 2 tbsp oil Fresh coriander leaves for garnish Sev and pomegranate seeds for topping Lemon wedges
Rinse poha in water and let it sit for 5 minutes to soften.
Heat oil in a pan, add peanuts and roast them until they turn golden. Remove and keep them aside.
In the same pan, add mustard seeds, let them splutter and then saute onion, green chilli and turmeric.
Add poha, sugar, salt, mix it gently and cook for 2-3 minutes.
Garnish it with coriander, sev, roasted peanuts, and pomegranate seeds and serve hot with a squeeze of lemon
