Independence Day 2026: Healthy Steamed Tricolour Dhokla Recipe Using Natural Colours

Celebrate Independence Day 2026 with a visually striking tricolour dhokla. This soft and spongy steamed snack uses natural ingredients like spinach puree and carrot juice to achieve the green and orange layers, avoiding artificial food colouring completely. The fermented batter ensures a light and airy texture, making it a healthy and festive centrepiece for your morning breakfast or tea time spread.

Ingredients

3 cups prepared dhokla or idli batter, divided equally 1/4 cup thick spinach puree 1/4 cup carrot puree 1 teaspoon ginger green chilli paste 1 tablespoon oil 1 teaspoon mustard seeds 10 fresh curry leaves 1 tablespoon fresh coriander leaves

Step 1

Divide the fermented batter equally into three separate bowls, mixing the spinach puree and green chilli paste into one for the green layer, and the carrot puree into another for the orange layer, leaving the third plain white.

Step 2

Grease a deep steaming pan and pour the green batter first, steaming on high for five minutes until slightly set, then gently pour the white batter over it and steam for another five minutes.

Step 3

Pour the orange batter as the final top layer and steam the entire stacked dhokla for twelve to fifteen minutes until a skewer inserted into the centre comes out clean.

Step 4

Heat oil in a small pan to crackle the mustard seeds and curry leaves, pour this tempering over the cooled tricolour dhokla, cut into neat squares, and garnish with fresh coriander before serving.
