Idiyappam is a South Indian delicacy made with rice flour and is steamed to fluffiness and melts as soon as it gets into your mouth. They pair wonderfully with coconut milk, making it a perfect choice for breakfast and dinner.
2 roasted cups rice flour 2 cups water 1 tsp oil ½ tsp salt
Add salt and oil to boiling water. Gradually add rice flour, stirring it continuously to form a soft dough. Let it cool slightly.
Use an idiyappam press to create noodle-like spirals on greased plates or banana leaves.
Steam the idiyappam for 10-12 minutes until cooked.
Enjoy with coconut milk, jaggery or curry!
