This boiled egg salad is perfect when you want something fresh, quick, and full of protein. It takes just a few minutes to put together and works well as a post-workout snack or a light lunch.
2 boiled eggs (chopped or sliced) ½ small onion (finely chopped) 1 small tomato (chopped) ½ cucumber (peeled and chopped) 1 green chilli (optional) Black pepper to taste Salt to taste ½ tsp lemon juice
Add chopped eggs, onion, tomato, cucumber, and green chilli to a mixing bowl.
Sprinkle salt, black pepper, and lemon juice. Mix everything gently with a spoon.
Garnish with coriander and let it rest for 2–3 minutes before serving.
Serve at room temperature or slightly chilled. Enjoy it on its own or as a side with dal and roti.
