Summer brings with it the incomparable joy of the naturally sweet mangoes, but the season fades all too quickly. To keep the summer fruit for a little longer, here’s how to store the pulp for winter.
Only pick the fully ripe, sweet, and firm mangoes for preservation. Varieties like Alphonso and Kesar are the best ones.
Before you extract the pulp, ensure that your hands, cutting board, knife, and blender are spotless and dry.
While making the mango puree, don’t add water, as extra water can form ice crystals during freezing, degrading the pulp's texture.
To preserve the colour and freshness of the mango pulp, add some lemon juice, or a little sugar or honey.
Freeze the pulp in ice cube trays, and pop the mango pulp cubes whenever you need smoothies, desserts, or fruity cocktails.
The best way to know which batch to use first is to put the ice cube tray in a ziplock bag, seal it, and label it with a permanent marker.
