Rasmalai is a timeless and traditional Indian dessert that has been one of the most popular sweet dishes in the country for centuries. Here is a simple and easy angoori rasmalai recipe!
2 litres of milk ⅓ cup of condensed milk 1 tablespoon of lemon juice ½ cup sugar 4 cardamom pods Flaked almonds, for garnish Flaked pistachios, for garnish Waer as needed
Prepare the chenna. Heat a litre of milk in a heavy-bottomed pot. Bring it to a boil.
Pour the lemon juice. Stir the milk. Turn off the heat. The milk will begin to curdle. Strain the chenna.
Let it rest in the strainer for an hour. The chenna will separate from whey. Place chenna in a mixing bowl. Knead it. Roll into small grape-sized balls.
Boil 3 cups of water and ½ cup sugar. Add the cardamoms to it. Once the syrup comes to a boil, add the chenna balls. Cover with a lid.
Let it cook for 10-15 minutes on low heat. Remove balls from the syrup. Boil the remaining milk. Add the condensed milk and simmer. Stir.
Add the chenna balls. Crush the cardamom pods and add them as well. Simmer and stir. Serve.
