Tiramisu is one of the most decadent Italian desserts. There are many different types you can make at home. Here is the recipe for the sticky toffee tiramisu.
1 ½ cups mejdool dates 1 cup of flour 1 tp baking soda 1 cup of boiling water 6 tbsps of melted butter ¾ cups of brown sugar ½ tsp vanilla extract 2 large eggs 1 tsp kosher salt 2 tsp ground cinnamon ¼ tsp ground cloves ¼ tsp ground nutmeg 4 egg yolks
½ cup granulated sugar ¾ cup cold heavy cream 1 cup mascarpone ¼ tsp of ground cinnamon, allspice and nutmeg mix ½ cup heavy cream ¼ cup of rum
In a bowl, add the melted butter, brown sugar, vanilla extract and two eggs. Add in mejdool date paste. Whisk until smooth.
Add flour, baking soda, kosher salt, ground cinnamon, ground cloves and nutmeg. Mix until smooth.
Preheat oven to 176 °C. Fill a baking dish with batter and bake for 30 to 33 minutes. Let this cool.
Mix the sugar and egg yolks in a large basin until they change from a bright yellow to a very pale yellow. Set aside.
Sugar and heavy cream should be whipped into stiff peaks in a separate basin. Add the mascarpone and ground cinnamon and fold gently.
Add sugar, cinnamon, clove, all spices, and nutmeg to a medium pot over heat. Allow the sugar to melt. Add the butter all at once.
Whisk in kosher salt and set aside. Cut it into two square layers in the middle with a serrated knife. Fill the baking dish with one layer of the cake, cut-side up.
Brush rum into the cake if using it. Spoon the toffee onto the cake using a cookie scoop, then use a knife to smooth it out to the edges. Serve.
