How To Make Thukpa: A Hearty Himalayan Noodle Soup

Thukpa is a comforting noodle soup that traces its roots to Tibet and the Eastern Himalayas. Full of vegetables, mild spices, and soothing broth, it’s a nourishing one-bowl meal perfect for cool evenings or winter nights.

Ingredients

100 g noodles (rice or egg) 1 onion (sliced) 1 tomato (chopped) 1 carrot (julienned) ½ cup cabbage (shredded) 1 tsp ginger-garlic paste ½ tsp chilli sauce (optional) 4 cups vegetable or chicken stock Salt, pepper, and oil as needed Fresh coriander for garnish

Step 1

Heat oil in a pan, sauté onion and ginger-garlic paste until fragrant.

Step 2

Add tomato, carrot, and cabbage, cooking for a few minutes until tender.

Step 3

Pour in stock, add salt, pepper, and chilli sauce, and bring to a simmer.

Step 4

Add noodles, cook until soft, and serve hot with coriander and a squeeze of lime.
