The ultimate comfort dish, mac and cheese is rich, creamy and irresistibly gooey. This classic recipe combines perfectly cooked pasta with a smooth cheese sauce, providing warmth and luxury in every bite.
2 cups elbow macaroni 2 tbsp butter 2 tbsp all-purpose flour (maida) 2 cups milk 1½ cups grated cheddar cheese ½ cup mozzarella cheese ¼ tsp black pepper Salt to taste ½ tsp mustard powder (optional) 1 tbsp breadcrumbs (optional, for topping)
Boil the macaroni in a large cooking pot with a pinch of salt and a few drops of oil. Drain and keep aside once it turns al dente.
Take a pan and melt butter on medium heat. Add maida and whisk for a minute.
Gradually add in milk while whisking constantly to avoid the formation of lumps. Cook until the sauce gets a thick and creamy consistency.
Add cheddar, mozzarella, salt, pepper, and mustard powder and stir until the cheeses melt to make a rich, creamy sauce.
Add in cooked macaroni and mix it until it is well-coated with the sauce.
If you are making the baked version, transfer this to a container, sprinkle some breadcrumbs and cheese, and bake it at 180°C for about 10 minutes until golden.
