Biting a sweet kernel of corn while sipping a warm bowl of soup is the best feeling. If you’re looking for a recipe to keep you cosy, this is it. Follow these steps to make sweet corn soup in under 15 minutes.
4 large sweet corn cobs 1 tablespoon butter 1 onion, chopped 2 cloves garlic, minced 4 cups vegetable broth 1 cup heavy cream Salt and pepper to taste
Cut the kernels from the cobs and set them aside.
Take a large pot, melt some butter, and add onion and garlic.
Stir in corn kernels and vegetable broth. Bring to a boil and let the soup simmer.
Puree the soup with a blender and stir in heavy cream.
Season with salt and pepper and serve it hot.
