If you want to make suji idlis instantly but have no curd, don’t worry, there’s a quick fix. Whether you want to take dairy out of the recipe or want to skip a grocery run, follow these 5 steps and get fluffy idlis.
1 cup suji 1/2 cup chopped veggies 1/2 tsp mustard seeds 1/2 tsp urad dal Few curry leaves Pinch of chopped green chilli 1/4 tsp baking soda 1/2 cup water Salt to taste Oil for tempering
Heat oil and add mustard seeds, urad dal, curry leaves, and chillies. Dry roast suji and let it cool.
Add in roasted suji, chopped veggies, and tempered spices.
Gradually add water till you get a smooth batter. Mix in salt and baking soda. Let it rest.
Grease the idli moulds, pour the batter into the moulds, and steam.
Serve hot with sambar and coconut chutney.
